Belle Vanille Puree is 3 fold strength. The ground Vanilla Beans are of the planifolia variety. This Puree is constantly being extracted by the Madagascar Vanilla extract therefore the Puree becomes fully saturated with flavor just waiting to burst out in a mix. When using the Puree, the flavor is immediately available and can be incorporated into cold mixes. The Puree mixes well with any sugar and withstands heat, not baking out.

Usage level: 1.5 -2 oz to 5 gallons or 50 lbs mix
Available in 1 lb jars and kilo containers.

    Vanilla Whole Beans

    Whole Vanilla Beans from Madagascar
    Vanilla beans grown on Madagascar, Reunion and Comoros are designated “Madagascar” or “Bourbon” vanilla. The French were the first to plant vanilla on these islands, formerly known as the Bourbon Islands. For 20 years, the plants flourished, but produced no pods. In 1841, Edward Albius, a vanilla plantation slave, discovered how to hand-pollinate the flowers—and the Malagasy vanilla industry was born.

    The fragrance and flavor of vanilla is not present in the flowers or green seedpods. The alluring scent and intoxicating flavor of vanilla come into being only after extensive curing does—and the process simply cannot be hurried. Green beans are briefly plunged into boiling water, then alternately set in the sun to dry and wrapped in wool blankets to “sweat.” Workers massage the beans to maintain the straight shape. During the curing process, the beans lose 80 percent of their moisture. Only beans that have developed on the vine for six to eight months and cured several months more yield the sweet, creamy, full flavor and haylike notes of Madagascar vanilla, treasured for what it adds to ice cream, cakes, cookies, pastries and sauces.

    Madagascar: (vanilla planifolia) long and slender this bean has a thick oily skin. This is the king of the Vanilla Beans. The beans have a strong vanilla aroma and flavor.

    Tahitian: (vanilla tahitensis) These Beans are short and very plump. They contain a higher oil and water content. This is the queen of vanilla beans. The numerous flavor notes of this bean are predominately sweet and fruity. These are beautiful beans that are carefully harvested and grown in Tahiti.



    Vanilla Ground Beans

    For the demanding purist, we are offering a unique method for milling gourmet quality vanilla beans. This method captures and intensifies the rich flavor profile of fresh and fragrant vanilla beans. Pound for pound, our ground vanilla beans are more potent than vanilla beans. They are ideal for baking as they withstand heat better than extracts. They are easy to use, economical, and waste free.

    Usage level is half of what you would use with a single fold vanilla extract. The recommended usage level is 2 to3 oz to 50 lbs or 5 gallons.

    The Ground Vanilla Beans make a fine addition to Ground Chocolate or Cocoa, or other spice blends.

    The uses for the Ground Vanilla Beans include adding to any sauce such as BBQ, Cajun, East Indian, or Pan Asian sauce. This is also excellent used in any meat rubs.

    No preservatives, artificial flavors, or additives or colors are added. Organic variety available.
